Eggless Bites

Makes 10 large or 20 mini.

 

Ingredients: 

14 oz firm tofu* (397 g)

2 cups finely chopped veggies

2 Tbsp nutritional yeast

2 tsp white miso paste

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp dried parsley

1/4 tsp turmeric

1/8 tsp black pepper

 

Directions:

1.) Preheat oven to 250 degrees. 

2.) In a food processor, blend all ingredients except finely chopped veggies. The batter should be very smooth. Move the mixture to a medium bowl and fold in the vegetables.

3.) In a silicone cupcake pan, fill ten cups evenly with the batter. This will make ten large eggless bites, or you can use a smaller silicone cup pan to get twenty.

4.) Bake for 25 minutes. Remove the pan from the oven and let it cool completely before removing the eggless bites.

5.) Place the eggless bites on a paper towel to soak up the moisture on the bottom of the bites.

6.) Serve by itself or with ketchup, hot sauce, or salsa.

*Note: Use soy-free tofu if you can't have soy.
