Chickpea Piccata with Lemon Sauce

Serves 5-6 pieces
Ingredients:
Chickpea Piccata
· 1 - 15.5 oz can chickpeas (rinsed and save the liquid from the can) (439 g)
· 6 Tbsp of the chickpea liquid (aquafaba)
· 1 cup oat flour (blend rolled oats in a high-speed blender to make flour) (120 g)
· 1 Tbsp Italian seasoning or pizza seasoning
· 1 Tbsp nutritional yeast
· 1/2 tsp turmeric powder
· 1 tsp white miso
· Pinch of black pepper
Breading:
· 1/2 cup breadcrumbs (60 g)
· 2 tsp Italian seasoning or pizza seasoning
Additional Ingredients:
· 2 tbsp capers
· Cooked whole wheat pasta
· Extra lemon wedges
Directions:
1.) Add all ingredients for the chickpea piccata into a food processor and mix until everything is well combined. [Do not add breading ingredients!]
2.) Mix breadcrumbs and 2 tsp Italian seasoning or pizza seasoning
3.) Form chickpea piccata patty with the mixture – makes 5-6
4.) Roll the patty into the breading mixture – this should help with the mixture sticking to your hands.
5.) Bake at 350 degrees for 30-40 minutes - Flip at halfway point
Lemon Sauce

Ingredients:
· 2 tbsp oat flour
· 1/2 cup vegetable broth (120 ml)
· 1 tbsp lemon juice
· ½ tsp onion powder
· ½ tsp garlic powder
· ½ tsp white miso paste
Directions:
1. Add all ingredients to a small pan and heat on stovetop whisking until warm.
2. Pour lemon sauce over chickpea piccata or veggies!
