Broccoli Salad

Serves 4

 

Ingredients:

4 cups of chopped raw broccoli crowns (700 g)

1 ½ cups of chopped cabbage (133 g)

½ cup sliced grapes or raisins (75 g)

½ cup chopped red onion (50 g)

¼ cup raw sunflower seeds (optional) (30 g)

¼ cup raw pumpkin seeds (optional) (30 g)

 

Dressing: 

16 oz silken tofu (454 g)

1 Tbsp lemon juice

1 Tbsp white miso

1 tsp garlic powder

1 tsp onion powder

1-2 tsp Dijon mustard

 

Directions:

1.    In a large bowl, mix chopped broccoli, cabbage, grapes, red onion, sunflower seeds, and pumpkin seeds.

 

2.    Blend the dressing ingredients together in a high-speed blender. Pour dressing over broccoli salad and gently mix.

 

3.    Keep the broccoli salad in the refrigerator until ready to serve.
