West African Stew (Nut-Free)

Serves 4
Ingredients:
· 1 – 14.5 oz. can diced tomatoes (411 g)
· 1 – 15 oz. can pure pumpkin (425 g)
· 1 – 15 oz. can chickpeas (425 g)
· 2 cups vegetable broth (480 ml)
· 1 large, sweet potato, cut into ½- inch pieces (400 g)
· 1 medium onion, chopped (100 g)
· ½ tsp cumin powder
· ½ tsp cinnamon
· ¼ tsp coriander
· ¼ tsp turmeric
· ¼ tsp black pepper
· ¼ tsp red pepper flakes (optional)
Directions:
Instant Pot
1.) Add all ingredients to a pressure cooker (Use a 6QT or 8Qt Instant Pot).
2.) Set the pressure cooker to high pressure for 10 minutes.
3.) Let the instant pot natural release.
4.) Add in chopped greens and any additional flavor enhancers (check notes).
Stove Top
1.) In a large stockpot add in all ingredients. Set heat for medium-high.
2.) Bring to a boil and reduce heat; cover and simmer for 12 minutes or until sweet potatoes are tender.
3.) Add in chopped greens and any additional flavor enhancers (check notes).
Notes: Add white miso, nut butter, red pepper flakes, or top with pumpkin seeds!
