Jalapeño/Pepper Poppers

Makes 24

 

Ingredients:

 

6 Jalapeno peppers & 6 Mini peppers (you can do all Jalapeño or vice versa)

1 cup raw cashews– or 1 cup cooked white beans - or 1 cup sunflower seeds

2 tsp nutritional yeast

2 tsp onion powder

2 tsp garlic powder

1 tsp white miso

¼ cup + 1 tsp lemon juice

 

¼ cup water *add this if you do not have a narrow blender

 

¼ cup breadcrumbs

2 Tbsp dried chives

 

Directions:

 

1.    Slice the peppers lengthwise and scoop out/remove all seeds.

2.    Place peppers on a baking sheet lined with parchment paper.

3.    Preheat oven to 350 degrees.

4.    In a high-speed blender, combine the remaining ingredients, except breadcrumbs and chives.

5.    Spoon mixture into each pepper until full. Sprinkle on top breadcrumbs and dried chives.

6.    Bake for 40 minutes.

 

Notes: Try different filling mixtures with white beans, sunflower seeds, or cashews. You can even combine the three by adding 1/3 cup of each.
